Crockpot Chicken and Vegetable Stew.

Ingredients:

4 boneless, skinless chicken breasts

4 cups of mixed vegetables (carrots, peas, green beans, corn)

1 onion, chopped

3 cloves of garlic, minced

4 cups of chicken broth

1 teaspoon of salt

1/2 teaspoon of black pepper

1 teaspoon of dried thyme

1 teaspoon of dried rosemary

2 bay leaves

Instructions:

Prep Ingredients: Chop the onion and mince the garlic. Cut the chicken breasts into bite-sized pieces.

Layer in Crockpot: Place the chicken pieces at the bottom of the crockpot. Add the chopped onion, minced garlic, and mixed vegetables on top of the chicken.

Add Seasonings and Broth: Pour the chicken broth over the ingredients in the crockpot. Add salt, pepper, dried thyme, dried rosemary, and bay leaves.

Cook: Cover the crockpot with its lid. Cook on low for 6-8 hours or on high for 3-4 hours.

Final Adjustments: Check the seasoning and adjust if necessary. Remove the bay leaves before serving.

Serve: Enjoy your warm and hearty chicken and vegetable stew!
